What's your all time favorite dish to make?I love cooking scallops. Something so special about the margin for error, 30 seconds short they are under, 30 seconds too much they are rubbery! Nailing that takes precision. I take everything in the kitchen back to playing music, it’s about timing, love, finesse, you got to be romantic about food, and I find that in scallops…. Also pasta, pasta is like Jazz, let’s save that for another time.
What would you do with the $25,000?There is a lot I could do with 25k right. I want to start a cloud kitchen and sell smash burgers to the greater Dallas area.
