Who or what inspires you to cook?

First and foremost, I learned to cook because i was always overweight and put on diets, I am a chubby girl cooking for survival. In Roma my mother would frequently entertain at home and, like her, I have always loved giving dinner parties and I also inherited her passion to find the very best ingredients. I always dreamed of having a restaurant, i love to feed people, food is my love language, so, instead of in our apartment, it all happens in our tiny restaurant.

What's your all time favorite dish to make?

I love to cook so many things and one of my favorite is the “Genovese”. A magical Neapolitan ragú from the 1800s consisting of veal and pork slow cooking forever under a mountain of onions.

What would you do with the $25,000?

Give Christmas bonus to our working “family”. it was a tough year and for the first time since we opened, we were not able to honor this tradition. Then pay restaurant debts.
