Cooking good food for good people is my love language. Teachers are so deserving of so much more than they’re paid. As their principal, I couldn’t fill their pockets but I could fill their bellies. They inspired me to start a catering company on the side - Rosey’s Cocinita. My hope is to be able to cater and have a food truck full time; then I can pull into school parking lots for staff lunches. You know they say, Feed the teachers so they don’t eat the kids.
What's your all time favorite dish to make?My culinary creations are nothing short of irresistible! Tender, flavorful Cuban Mojo Pork bathed in a zesty Citrus sauce, crowned with tangy pickled red onions & a luscious lemon crema. Pair it with the tropical allure of Toasted Coconut-Pineapple Rice & Cuban-inspired black beans. But then, my Sweet Beef Barbacoa juicy, slow-cooked perfection served alongside my signature rice & indulgent cheesy-garlic refried beans; a mouthwatering symphony of flavors. It's hard to choose a fav.
What would you do with the $25,000?If I were given $25,000, I would use it to rebuild and chase my passion for food. Recent life challenges led to losing my house and the savings I had for a food truck, forcing me to settle for a fixer-upper home. This funding would help me work toward my dream of owning a food truck to share my culinary creations and renovate my kitchen, creating a space where I can refine my craft and rebuild my life with hope and determination.
