Who or what inspires you to cook?

Both of my grandmothers were fantastic at home cooks. All of the holiday lunches and dinners were always packed with great food. Still crave some of the desserts they would make us.

What's your all time favorite dish to make?

For my wife it would be a chorizo and clam pasta. It has freshly grated heirloom tomatoes, parsley, shallots, and lemon. Very simple, but tasty. My nieces and nephews call me uncle Guac. This is because of my bacon and Brussels sprout guacamole that they love. When working I love to make bacon. Nothing beats bacon fresh from the smoker.

What would you do with the $25,000?

The area of Birmingham my wife and I live in has very few lunch options. The only “healthy” options are chain restaurants. I would love to invest in our future and open a healthy lunch restaurant. We met at the Culinary Institute of America.
