I am inspired by the other young black men who were tossed aside into the foster care system like I was. Sadly some of them did not make it. We were told that our options were grey headstones or grey bars. Being told such things by those who are entrusted to care for us is why I refuse to settle for anything less than the greatness I know that I can achieve. I wasn’t a mistake and neither are any of us.

Definitely shrimp & grits. Such a simplistic dish w/so much room for creativity. For my shrimp & grits I like to cook the grits w/white wine or goat cheese or infused stock. Making shrimp 2 or 3 ways & topping it off w/a fresh element like mango salsa or apricot chutney or a peach apple slaw just to brighten up the dish & pallet & provide a fresh component that truly compliments such a rich undertaking. This is also the first dish I ever made for my husband of 12 years.

Honestly, there are many things I’d want to do but the main goal is to invest in myself & my community. As a self investment, I would like to travel & learn about other forms of cooking/cuisine. I never went to culinary school & being self taught, I know I can always learn more. There’s a world of food out there & I’ve never left the country. As for my community, I like to employ from the black & LGBT communities in an effort to pour back.
