Who or what inspires you to cook?

I was initially inspired by my mother. She was a fabulous cook, and I am fortunate to have many of her recipes. Serving in my church helped grow my abilities creating "Mystery Dinner" meals, cooking for fundraisers and feeding the homeless. I have also been inspired by Chef Paul Prudhomme and have several of his cook books. My wife and I met Chef Paul at K-Paul's Kitchen and have autographed menus from him. Of course, inspiration also comes from watching episodes of Food Network shows.

What's your all time favorite dish to make?

It is a toss-up between my beer battered fish with twice fried French fries and my BBQ baby back ribs with one of my scratch-made BBQ sauces. I serve the baby backs with garlic herbed spaghetti, BBQ baked beans, spinach salad and French bread.

What would you do with the $25,000?

I would finance my food trailer, Fish 'N Pig and fulfill my dream of having my own business serving up my food.
