This dish combines the summer I lived in Seattle with my experience on the ranch in Wyoming. Thanks to Pike Place Market, I played around with seafood and created this dish, which pairs perfectly with these special potatoes.
Who is your culinary inspiration?Chef Justin Parrish from St. Burch Tavern. He is the first chef who believed in me when I was just a 19 year old line cook. He’s a generous teacher, kind leader, and passionate about every aspect of getting beautiful food on the table. He taught me the importance of serving others, and doing so lovingly.
What would you do with the $25,000?I’d create a nature and cooking retreat for kids — a place where they learn where food actually comes from, and skills to create their own. Gardening, ethical cattle and dairy farming, baking and cooking. I want kids to learn how much work goes into the food we eat, and to see the beautiful opportunity it gives us to express ourselves through it.
