Connect What is your signature dish?

My signature dishes are jackfruit pozole verde and walnut-mushroom tacos inspired by the comforting meals I grew up eating. I love taking traditional flavors and creating my own plant-based fusion versions that still feel hearty, homey, and full of flavor. My goal is to make vegan and vegetarian food feel exciting, beautiful, and satisfying for everyone, whether they normally eat plant-based or not.

Who is your culinary inspiration?

My biggest culinary inspiration is my mom. She cooked the most delicious homemade meals for our family growing up, and she taught me from an early age that food is one of the best ways to show love and bring people together. After my own autoimmune diagnosis years later, she also reignited my passion for food as medicine and inspired me to create meals that are both comforting and nourishing.

What would you do with the $25,000?

I would use the $25,000 to start building a small, affordable vegetarian café focused on healthy comfort food near hospitals and medical centers, where nutritious options are often limited. I want to create a welcoming space where people, families, and healthcare workers can access flavorful plant-based meals during difficult times. The money would help me purchase equipment, expand my business, and continue building my dream step by step.
