How long have you been cooking?

Began my career in the kitchen at Little Italy Naples Florida managed by Phillip & Anna Marrone in 1994, after traveling to France, Italy, among other exclusive places in the USA. The Montauk Yacht Club, Gulf Harbor Country Club, Bridgewater Country Club, Amarillo Golf and Country Club Turtle Bay Hawaii, Pelican Bay Club, benchmark international and Noble House Resorts I found renewed success when opening the Moca Café in North Miami, and Latitudes in Hollywood Florida.

What is your signature dish?

I have multiple signature dishes very hard to just pick one Dish!) Chilled Spring Pea Soup 2)Afro Caribbean Paella with lobster and Crawfish 3)braised short ribs with celery roots puree 4)Miso and pistachio-crusted Halibut with Duris Djondjon.

What will you do with the $50,000?

southern Smoke Foundation, which has helped people in need from the food and beverage industry during a pandemic. James Beard for the Black restaurant grants. BCA to raise funds for mindful eating for my beloved community, No Kid Hungry WCK world central Kitchen with Chef Jose Andres.
