For as long as I can remember I was always helping my mom and nonny in the kitchen. It wasn’t until I was about 9 years old I started making things on my own, which started with popovers. I continued doing my thing in the kitchen through my teenage years until about 5 years ago when my brother introduced me to all the incredible food New York City had to offer. We then went to Italy and that’s when I fell in love with food, that’s when it became my passion.
My signature dish is Chicken Riggies, fresh rigatoni I make with my pasta extruder, a creamy red sauce with peppers so it has a bite. This recipe originated from Utica New York but a friend introduced me a few years ago and it’s been my favorite ever since.
It would turn my dream into a reality which is to open a farm to table restaurant here in upstate New York, supporting local farms and bringing back the basics. I want to give people who struggle with dietary restrictions a place where they can actually have options and indulge. I would also love to make and sell fresh gluten free pastas so it’s easily accessible, plus it tastes just as good! I want to make peoples lives easier while bringing fresh natural food to the area.
