How long have you been cooking?

I started cooking as soon as I was tall enough and could keep my balance on the step stool that my mother slid up to the kitchen countertop. I've been cooking professionally for 14 years.

What is your signature dish?

A Spanish Paella. In my early 20’s, I visited San Sebastián, Spain. I was eating and drinking all around the city, soaking up the culture. I stayed with a local family and every Sunday we would make it a point to go to the markets then cook a family meaI. I would make something, and the father of the house would make a paella. It was there I learned more about the dish and what it represents. It is a dish you make with family and friends and then share and build memories. 

What will you do with the $50,000?

We would love to expand our outreach of sustainable seafood. We want to incorporate educational cooking classes of teaching what to do with a fish after its caught, how to filet, how to use all of the fish for different meals for zero waste.  Most importantly, the funds would be used to spread awareness to host these pop-ups and educate others on the impact of choosing sustainable seafood. We would use any additional funds for purchasing portable kitchen equipment.
