How long have you been cooking?

For as long as I've been enjoying solid foods. While as a toddler it meant cooking (assisting) with mommy, I've always been fascinated and curious in the kitchen. While dad thought me where the food came from (our tiny kitchen garden), so I have a greater appreciation for the food that makes it onto our dinner plates.

What is your signature dish?

Curry Stew Chicken Wings! Undoubtedly my favorite dish to cook, enjoy and share with others. A classic combination of marinating the wings in Caribbean herb marinade, ginger and curry powder (Madras), then brown-stew (using brown sugar to caramelize). Finally we gently simmer the coated wings in it's own juices until tender, juicy and screaming with rich Caribbean flavors. * add coconut milk for a more rich flavor.

What will you do with the $50,000?

A (multi-purpose) Studio Kitchen! A space where I can create, experiment and teach. Shoot cooking video tutorials to share with the world as I'm already doing, host cooking classes for underprivilege children and parents of adopted children (so the parents are in a better position to pass on the child's culinary heritage to them) and host a Sunday Dinner Club to further share my beloved Caribbean Culinary Culture with others.
