How long have you been cooking?

16 years. Culinary came about as a second career. Having spent my education and a decade in politics and human rights, there was a greater difference over making an individual content from something they ate rather than something debated in a political arena, and I haven’t looked back.

What is your signature dish?

Smoked Duck Breast, Minted Pea Purée, Chateau Potatoes, Cherry Demi Glacé

What will you do with the $50,000?

Invest it towards my career goal of owning and operating a high end destination boutique inn and restaurant that showcases Canada’s landscape and communities through food; an entirely locavore concept that depends on local and Canadian producers.
