I want "Plant Lyfe" to be the vegan "Chefette" here in Barbados. We need to build a sustainable commercial kitchen + food truck
I have been cooking since I was a kid. My first memory is making "Cracked Black Pepper Biscuits" after recording an episode of "The Frugal Gourmet" on PBS. I convinced my mom we should make it. I graduated from the Art Institute of NY in 2005 + after internships at restaurants + cake shops in the city I started a home catering business while I worked full time at New York City Transit. In 2014 I left NYC and return to my home of Barbados + been working as a full time chef.
I am a vegan chef in Barbados. My company Coconut Baby has become known for vegan and / or gluten free desserts that don't taste "healthy". The dessert that is most requested is my vegan cheesecake using either cashews or seeds and coconut milk, then topped with local seasonal fruits or dark chocolate. Chocolate is very big in Barbados.
I would like to build a commercial kitchen and acquire a food truck so that I can build my brand Plant Lyfe, which is a vegan fast food concept built on Caribbean inspired plant-based deliciousness. All of our dishes use local seasonal fruits and vegetables to create mouthwatering menu items like "Hot Pepper CHKN sandwich" made from the soursop fruit. Or our vegan "cheese" sauce which is made with fermented Noni fruit.
